Food Safety Education - Protect your customers and your business

E-learning course: Enhancing participation in Codex activities


FAO and WHO have developed an e-learning course, entitled Enhancing participation in Codex activities to provide information on Codex procedures and to support effective participation of all delegates attending Codex meetings.

Farm Food Safety

The target audience of the distance learning curriculum includes: Designated Codex Contact Points; Food safety policy-makers; NGOs representing food industry, scientific and consumer interests and Academic Institutions.

All beneficiaries of the FAO/WHO Trust Fund for Participation in Codex are strongly advised to complete this course. The course explains the organization and operation of the Codex Alimentarius Commission and its subsidiary bodies and the process of developing international food standards. 

The FAO/WHO scientific advice which forms the basis for many Codex standards is outlined. Guidance is also provided on strengthening national Codex programmes.

Dish it up

Dish it up is an interactive CD-ROM developed to help teachers make learning about food fun for young people (11-12 years). Informed by pupils’ feedback, the resource brings the subject of food and making healthier food choices to life in an enjoyable and fun way.

The CD-ROM includes a virtual journey split into three episodes, activities that cover hygiene hazards and body image and a series of interactive games. Teacher notes are also included.


Dish it up has been developed to:

•   be both flexible and practical so teachers can choose and plan the most suitable way to use it either with a group or for whole class teaching

•   support independent self study so pupils can learn and test their knowledge at their own speed

•   support the curriculum with relevant links to food technology, home economics, science, personal health education and physical education

•   be integrated within the whole school approach to food education

When someone swallows bacteria that cause food poisoning, there is a delay (incubation period) before symptoms begin. This is because most bacteria that cause food poisoning need time to multiply in the intestine. The length of the incubation period depends on the type of bacteria and how many are swallowed. It could be hours or days.  >>

Food poisoning is infection or intoxication due to consuming food or beverages. We get food poisoning from eating food that contains harmful bacteria, viruses or poisonous substances known as toxins.Many different sorts of bacteria (germs) can cause food borne illness. If food is kept warm, bacteria can grow rapidly and reach unsafe levels within hours. Good food hygiene standards are vital to prevent these illnesses.  >>
